Pictorial : Andhra special gutti vankaya koora /spicy eggplant gravy south Indian style !!

How you are doing...? egg plant/vankaya/brinjal is one of my favourite vegetables..i always love "Andhra special gutti vankaya koora " Its a good combination of all Indian spices cooked in a tasty gravy.Its so delicious..It goes well with rice as well as rotis.
In south India,people from different regions cook this curry in different ways.I tried some of the  versions by reading different blogs/watching videos but this one is the best as per my opinion.it consumes less oil compared to other versions of this recipe and tatses good too..:)

Lets go the procedure


Ingredients :
Fresh tender eggpalnts

To grind Ingredients :
onion
ginger garlic
cumin seeds
green chillies
Curry leaves
salt
garam masala powder
red chilli powder ( my red chilli powder is home made which has cumin and daniya powders included in it )
salt
Finely chopped coriander/daniya leaves for Garnishing

Procedure :

Cut the egg pant/brinjal/vankaya as shown below and place them in salt water,so that they dont change the colour

take 2-3 table spoon of oil in a pan and cook the eggplants untill they are half cooked and keep them seperately


Now its time to make the paste,Take all the grind ingredients mentioned above in a blender and make paste,and stuff our half cooked brinjals with the paste .



Add the remaing paste in a pan along with our stuffed egg plants and cook them by closing lid,adjust salt and chilli .add some water if required


 switch Off the flame..when the eggplants are fully cooked..garnish with coriander leaves,your dish is ready to serve.!!
